Breakfast Scramble

This breakfast scramble is my all-time favorite for feeding a crowd-perfect for lazy weekends, family camping trips, or hosting brunch. The crispy, golden potatoes steal the spotlight, but when you mix in savory sausage, smoky bacon, caramelized onions, and fluffy eggs, it turns into a hearty dish everyone will be asking for again and again.

The best part about this breakfast scramble is that you can add in the things you love! For instance, when my best friend visits, I always replace the cilantro with green onions and add in some sautéed mushrooms. I know that cilantro tastes like soap to her, and she LOVES mushrooms.

Sometimes I add in eggs, sometimes I don't. My boyfriends LOVES eggs but I am more of a bacon fan haha! Like I said, add what you like!

The secret ingredient to this best breakfast scramble in my opinion is the steak seasoning. I have been using steak seasoning on my potatoes for as long as I can remember, and it always adds the BEST flavor!

Breakfast Scramble Ingredients

Yukon Gold Potatoes - My favorite potatoes because they are so flavorful, tender, but hold their shape perfectly after sautéing.

Onions - I love yellow onions because they are sweet and caramelize so well but you can use white onions, red onions, or even shallots.

Bacon - I have the MOST amazing butcher nearby called the Meating Place, and they have this delicious peppered bacon that we adore. Use whatever bacon you like!

Sausage - My kids LOVE kielbasa sausage so I like to add that into the scramble as well. You could use any kind of sausage you like or even ham!

Eggs - What breakfast scramble would be complete without eggs! Add a little water into the whisked eggs to make them extra soft and fluffy.

Shredded Cheese - I'm always team give me all the cheese so a smattering of freshly shredded parmesan, colby jack, pepperjack, or even mozzerella tastes incredible!

Cilantro - Top your breakfast scramble off with some fresh cilantro, parsley, or green onion for color and flavor!

Steak Seasoning - I love using this steak seasoning on potatoes!

Tips For The Best Breakfast Scramble

  1. I would suggest getting all your ingredients together before you start cooking your breakfast scramble. That way, everything will be ready to go as soon as you begin and you won't accidentally leave anything out.
  2. Cut your potatoes into small cubes so that they cook quickly.
  3. Cook your scramble on medium heat. This will create some nice browning on your potatoes but won't burn the rest of your ingredients.
  4. Add a little water to your scrambled eggs to make them extra fluffy.

How to make your breakfast scramble

  1. Get all your ingredients ready. Chop up your bacon, sausage, onion, garlic, and potatoes.
  2. Heat your skillet on medium heat for 10 minutes.
  3. Add in your oil, potatoes, and steak seasoning. Let them brown while covered for 15 minutes or until your potatoes are tender.
  4. Stir the potatoes and then add in your onions, bacon, and butter. Cook until the bacon is crisp. This should take about 10 minutes.
  5. Add in your sausage and brown until crispy, and then flip.
  6. Add in your scrambled eggs, cheese, garlic, and cilantro if desired and scramble everything together!
  7. Serve hot and enjoy!

Breakfast Scramble

This breakfast scramble made with yellow potatoes, bacon, sausage, onions, and fluffy eggs is easy to make and always satisfies a crowd!

Ingredients

  • 2 Tablespoons olive oil
  • 6 medium yukon gold potatoes
  • 1 Tablespoon steak seasoning
  • ½ large onion
  • 4 slices bacon
  • 1 cup diced ham or sausage
  • 6 large eggs
  • ⅓ cup cheese
  • 2 Tablespoons cilantro

Instructions

  • Heat your skillet over medum heat and then add in your oil.
  • Add in your diced potatoes and let them cook covered for 10-15 minutes or until they form a nice brown color.
  • Season your potatoes with your steak seasoning.
  • Flip your potatoes and continue cooking for another 10 minutes or until knife tender.
  • Add in your onions, bacon, and butter and saute until your bacon is brown and crispy.
  • Move your cooked potatoes and other ingredients to the side of the pan and add in your sausage. This keilbasa sausage I like is already cooked so all you have to do is brown it.
  • Add in your egg mixture and scramble everything together until the eggs are cooked through.
  • Top your scramble with some cheese and cilantro and serve hot!

Notes

Cooking on medium heat is the best way to promote browning without burning.
Make sure you taste your potatoes to see if they are done enough before you add in the bacon and sausage.
