Mirror Glaze Ocean Wave Cake

Skill level: Intermediate

I created this piece for the Simi Cakes Torch Team Collaboration and loved making it so much, I turned it into a tutorial! I just love how the translucent isomalt wave topper pairs with the super shiny mirror glaze. It's like you're gazing directly into the depths of a swirling ocean.

In this tutorial, I will teach you everything from how to make a two-part mold for the sphere, how to sculpt your own wave and create a mold from that sculpture, how to form isomalt waves, how to frost and assemble our cake for a flawless finish, how to make perfectly smooth mirror glaze and how to color it and even how to make some fun sugar coral! This cake may be small but it is FULL of valuable information!
